pumpkin recipes (soup)

from Julie Levy:

1)      Mashed pumpkin: cut in half, scoop out seeds, bake pumpkin for 1 hour or microwave for 20-30 min, peel of skin, mash with butter, brown sugar, salt, pepper to taste.
2)      Curry pumpkin soup:
2 tablespoons butter (olive oil for vegans)
3 tablespoons flour
½ chopped sweet onion
2 tablespoons curry powder
4 cups vegetable broth
Meat from ½ pumpkin mashed 
1 can coconut milk
1 tablespoon sugar
Salt and paper to taste
In a large pot cook onions in melted butter until soft. Stir in flour and curry powder until smooth. Whisk in broth, cook and stir until thickened. Stir in pumpkin, coconut milk, sugar, salt, pepper and cook until hot. Enjoy.
