eggplant lasagna minus the past

if you are looking for low carb, this is a great simple dish

 

ingredients:

 

1 med eggplant sliced about one inch circles

either 2 cups sliced tomatoes or 2 cups canned tomatoes or sauce

several cloves fresh garlic sliced thinly long ways or chopped

italian seasoning or sm bunch chopped fresh basil

shredded mozzerella cheese

olive oil

seasoning salt (adobo)

 

layer on glass baking pan the following in this order: garlic, tomatoes, eggplant, italian seasoning or basil. make sure that each ingredient covers the entire pan. Then top with olive oil, sprinkle seasoning salt, and then cover with shredded mozzerella. Bake until done (approximately one hour or less on 350)
